Sunday Funday, Recipes, Walks, and Crafting

The girls spent the morning pampering Mr Buttons with love and grooming.  

Breakfast the girls requested an oatmeal bar.  We make a big batch of oatmeal and put out lots of toppings out.  


...and of course, goat milk. 


I headed to mass and then over to the store.  
After all this sitting we had to get a walk in.  Two of the girls went riding (Mr Buttons) and two of us went for a walk. The goal was 2 miles but I think we were just short of that.  We all got home at the same time and got the kitchen ready to make dinner.The granddaughters wanted to learn to make trifle  and stacked enchiladas. 
 First up was dessert. 
Berry Chocolate Trifle
We made a strawberry sheet cake last night. Today, they sliced long ways. We made two, one with creamed sherry and the other without. 

Brush the cream sherry on one of the side of the cake. Then spread with jam.

The other cake with the three berry jam we canned a month or so ago.  Strawberry jam can be used.


Next layer is cool whip. 


Then vanilla pudding. Layer again. 


The girls wanted to change it up by topping it with chocolate pudding and crush mint chocolate cookies. Then into the refrigerator it went. 


Enchilada stack was next. One was vegetarian and one chicken. We used the pintos and chickens we canned a few months back. So good. We lined the baking dishes with green enchilada sauce (don't forget to spray them with cooking spray so they won't stick). Top that with corn tortillas, then shredded chicken on one and pintos on the other. Next onions, cheese and 1/3 of a cup of  green enchilada sauce and repeat.







We served with salad, canned fruit and tamales we had canned last month.  Great dinner. 

Time for crafting.
