Canning beets

Beets are coming like crazy. They are extremely large this year.  I picked six and that filled 11 pint jars. 

I boiled, peeled and cut up in large junks the beets. 





In the bottom of each jar placed  a bit of onion and a cinnamon stick. 


The brine was 2 cups sugar, 2cups white vinegar, 2 cups water, 1 teaspoon allspice, 1 teaspoon cloves, a large pinch of whole allspice, a heaping teaspoon of cinnamon.  Heat until all the sugar is dissolved. The house smelled divine!




Pack the jars with beets and pour the brine over the top, leaving a half inch of headspace. 




Water bathed for 20 minutes (high altitude) 


I did manage a walk, then to the store get new glasses and chicken feed. 




Oh and picked spinach and washed it for a salad.
