Crockpot giggling apples

It snowed all day. Our neighbor made a valiant effort to dig us out but since it did snow all day , we were closed up again by the end of the day.  Even he was surprised at how much we got. All in all we got around a foot of snow...much more than the 2-5 inches predicted.

So, I made good use of the snow by making ornaments for my grandson, baked chocolate salted caramel cookies for a cookie swap, and came up with a new crockpot apple recipe.

My mom is the queen of homemade applesauce.  She could take a few leftover apples put them in a pan and turn them into a bowl of smiles for dinner.  Inspired by my mom and a bowl of giggling apples, along with a crockpot begging to be used to warm up a snowy day, I got to work.
Not only did these turn out wonderful but the house smelled like a magical holiday!

Giggling apples

6 apples peeled, cored and quartered , I had red delicious so that's what I used
1/2 cup packed brown sugar
2 tablespoons raisins
1 teaspoon grated lemon peel
1 tablespoon cinnamon candies
1to 2  teaspoons Frangelico Liquor
4 tablespoons butter
juice of one clementine
1/3 water

Combine brown sugar, raisins, lemon peel, candies, liquor and juice of the clementine.

Put apples in the crockpot.  Pour your sauce over the apples.   Add water. Stir until all mixed together. Dot the top with butter.

Turn crockpot on high for 4 hours or low for 8 hours.

Stir.

The result are perfectly cooked apples relaxing in a rich sauce.

Serve plain or with whip cream or heck why not ice cream!

It continues to snow the rest of the day. No one ventured out. We ended the day with an extremely peaceful time to read by the fire.
