Morning and a recipe

We are sure enjoying the sun this morning. The goats were very hungry with only snow to graze upon.  New baby chicks are growing tall in their warm coop.






Dinner ~

Aunt Ruth's Italian Sausage and Peppers

My mom is in her eighties and going strong but often times her neighbors show their awesomeness by shoveling her walks or mow ing her lawn.  When she asks how much she owes them the answer is often - "A batch of your Italian sausages".  Her recipe was handed down from her Aunt Ruth Banahan. Yes, great Italian from an even greater Irish!  These taste fabulous on pasta or in a hoagie bun. Here's the recipe. Try it and let me know what you think.

Here's what you need :
3 large green bell pepper or 2 green and 1 red pepper
3 tablespoon olive oil
salt and pepper to taste
1 lb hot Italian pork sausage (the link kind)
3/4 cup red wine
a sliced onion
a couple cloves of garlic chopped.

Wash and remove seeds and stems from peppers.  Chop into  large chunks.
Brown sausage in sauté pan with oil. Add peppers, onions, and garlic. Sauté lightly.
Put everything into a baking dish.  Pour wine into your sauté pan to bring up all the bits left in the pan. Pour over the sausage. Cover and bake at 325* for an hour.

Basil and mushrooms can also be added to this recipe.

Also went out to the green house to gather greens for a salad for dinner.



We also took a little time to water our worm compost.
