Blackbird morning and last night's dinner

Living in the country is generally very quiet but this morning was filled with the rowdy sounds of excitable blackbirds. They were all trying to congregate in the one tree we have in the area. It was the meeting place before they would swoop down into the  sunflowers for an all day party. It was fun to watch them go back and forth. (not sure if the farmer thought it was fun to watch...)



 
It rained all day yesterday and most of the night.  The animal water buckets were all nice and full this morning.

The well saga continues. Our years of camping with mom and dad growing up have sure come in handy to deal with not having running water at the moment.  I went and bought two tubs for the kitchen. One for washing dishes and the other for rinsing them. I also needed a drainer since we usually use the dishwasher. It felt like I was constantly boiling water.

I made enough dinner for two nights and we ate on paper plates.  If it was up to Dude we would have had Rocky Road Ice Cream , a side of fudge bars and snickers. Ohgood grief.  I took over. We had one of my sister Amy's recipes.  Chicken enchiladas. It is fast, easy, uses green chilies we canned and leftover roasted chicken we had raised.  Our hens tend to dress out at 5-7 pounds.
The chicken chopped  was about 2 cups.

Combine everything but the tortillas and green chili sauce.

Assemble them by adding 3 tablespoons of filling on a tortilla and rolling. It would have made clean up a breeze if I had remembered to line the dish with foil but using cooking spray helped.  Pour the green chili over the entire dish. Bake for 25 minutes at 350*.  These can be made with no meat and just cheese or add in some veggies and it is just as good.

Okay, gotta go. The animals are freaked out over the high winds and need a little bit of TLC.  I just saw the goats stampede across the yard because a birdhouse was blowing and knocking against a pole.  (smile)
