Where are the eggs and canning pear chutney

The other day Dude request I buy eggs from the store. He felt our hens were lacking. I said there should be eggs out there but okay.  Yesterday I bought eggs... gasp. 

Today I went out to go for my walk when the lambs called for me to come over. Molly said she had a secret and Prudence (the small one) said Molly was just a tattle-tail. 

Prudence aka Dolly (Dude refuses to call her Prudence) is below.

Molly said, "come ere"  Sometimes she says that just to get a head rub. 


But this is what she showed me.  Thank you Molly! 


Yep, they were right there she told me. 


A little over a half dozen from the barn. 


Then I checked the henhouse.... 

OH Dude. 


So.... I took the store bought eggs and made hard boiled eggs. 


Most of the day was spent taking down Christmas decorations and 

Canning pear chutney.

I love chutney  I love it with lamb (not one of ours any more but I do like lamb), cheese, oatmeal, rice, over cream cheese, on sandwiches, over tators or with squash. 


Again, I used what was left from the holidays.

Cast of characters:

1 cup of cherry flavored craisins
1 cup of boiling water
1 tablespoon olive oil
1 medium onion chopped
1 teaspoon of sea salt
3 tablespoons of grated ginger
1 tablespoon mustard seeds
1/2 red wine vinegar
3 tablespoons of cherry brandy
4 cups roughly chopped pears  ( it was 6 small pears)
1 cup of sugar 


My jars were sterilizing. 


1. Place craisins in a bowl and pour water over them. Set aside.
2. In a large pot heat oil, onions and salt until onions are soften. Add ginger and mustard seed. Seeds will soon begin to pop.
3.  Add vinegar and brandy, stir while gathering the bits on the bottom of the pot.
4. Add craisins with their liquid
5. Add pears (on the second batch I did add an apple since I was short a pear) and sugar. Stir.
6. Put heat on low and cook for 30minutes or until the pears soften. 
7. The chutney should be syrupy not watery and rich in color.  Taste before you ladle into jars. Do you need to add salt? sugar? vinegar?
Are your jars ready? Wipe rims. Ladle into sterilize jars, add lids and water bath for 20 mins or 15 if at sea level. 




Remove from the bath. Listen for the pop or ping of your lids. Make sure all seal . I do not move mine until the next morning, labeling them before putting in the pantry.

Next time I may try it with brown sugar ...or pepper flakes... or apple cider vinegar...regular raisins... the ideas are endless.


Of course, I left a sampling out for me! Yum!

Worked on a little bit of everything today.

Today, Dude is nursing a horrendous chest cold. He insists on beginning the floor project.  I am sticking to my prior plans.  If the homestead is my "job" and I am the manager/owner... I need a weekend too.

Well, first I need to go feed the animals and make sure their water troughs are scrubbed and filled. I drain them and fill them up on Saturdays and scrub them once a month. The homestead doesn't really just stop for the weekend - smile.


 I get the water down low enough so I can push the trough over to drain and clean. 
 Sorry the next few pictures are blurry Molly, the Suffolk lamb kept nudging me.


I worked with the lambs for a bit getting some of the mud and dirt of Molly.  Prudence didn't want any help in that area -she looks like a pig that just rolled in the mud. I will work with her tomorrow. I did get Molly looking much better. 




I made a stop in the greenhouse and was so surprised to find two large cucumbers hiding in between the plants. 



Dude stuck around in the greenhouse to water .

I wanted to make and can maraschino cherries.  This is the end of cherry season.  Colorado has beautiful orchards of cherries. There are quaint little places along mountain roads with small cottage shops and stands selling cherries, pies and jugs of juice.  I love visiting them.  scraaaaatch… I love those places but I bought mine from a grocery store in a nearby town.  I am using the recipe from Living Homegrown but I could have use just about any recipe as most of them follow the same procedure and ingredients.  It is the almond extract, that most will tell you, give the cherries their distinct flavor.

I pitted the cherries but left the stems on them. 

 These are pitted. 


 They look and taste wonderful. 


I was lucky to have one of my sons and girlfriend come over for a bit.   Then it was time to nap (I am one of those 15 minute solid napper), eat and sew! 

I finally got those pants made.  Someone was mad I was in the sewing chair. 



Done.


She wouldn't even look at me. 


I am also following the FQS Cross Stitch quilt sew along. They are on block two and I got those done. It is a beginner quilt and even though I am not quite a bigger, I think I  am more apt to finish a quilt if I follow each week with a group. I am totally only using scraps. 



And began another block cutout for this quilt....

Mother's Day Sunday - a recipe and a crochet pattern I found

We were blessed with a beautiful day.  It was so clear we could see Longs Peak in the north and Pike's Peak in the south.





It's Sunday and it's Mother's Day but it begins with still making sure the animals are doing well, fed and watered. Today will be the first day the meat hens go outside for fresh air and we clean there coop. 


Out they go... their legs are a bit wobbly with everyone pushing and shoving. 


The regulars stopped by to check out the commotion. 


Others, just ignored the whole scene.


We clean and filled the water containers. 


Including the one for the sheep. They came over for some love and scratches.



I picked a bunch of greens for a salad... parsley, lettuces and mint.



I made a salad based on this recipe from Ina Garten .  I didn't have farro but I did have quinoa. I didn't have pistachios but I did have walnuts plus no tomatoes.  It  turned out very good with the substitutes. 


I did finish crocheting a spa set for my mom.  It has three face scrubbies, a bath pouf, a wash cloth and a soap bag. The patterns are free. I found them here..  She has video tutorials that are easy to follow. 




Then it was time to head to the city to pick up my mom and head to my brother's house. All in all a 2 hour trip one way but worth it. 

Along the way we saw a goose and her little ones out for a stroll. 


We had a good day with wonderful weather.  Happy Mother's Day mom.
