Garden update, cabinet is in and dinner

We took the morning to see your grandson Logan get his gold belt today. Karate has really helped him to become disciple might 6 year old.


While in the city we ran a bunch of errands. 

Then home to the garden and chores. 

Zucchini plants are amazing. 





All kinds of tomatoes... looking divine. 






Strawberries...



Scallions


Onions...

Pickles... cucumbers. 

and Thai chili peppers

We did manage to get the new cabinet in the sewing room.


And emptied a lot of boxes of fabric. 


Callie supervised and approves. 

We wanted a light summer dinner.  Most of it was from the garden. 
Lettuce, carrots, tomatoes, zucchini, beets and from the pantry garbanzo beans we had canned. 



We also paired some of our pickled beets with goat cheese and snacks.
I was afraid Dude would hate dinner but he had two bowls and ate all the snack plate! Then he said, "good dinner Hon".  I was surprised. 


Time to settle in and relax for the evening.

Dis-L-Do update 6-5

It is finally sunny and warm.  Springtime for us has finally arrived. 

The eggs were washed up just after breakfast .


I did get some vegetable plants in near the house. The big planting will be out by the greenhouse. 


The lambs were happy for the recent rains and the tall grass it brought. 



Strawberries were on sale (I ate all the ones we grew.  It is our first year growing them).  I decided to make strawberry jalapeno jam.  We make it every year. 


Very simple , just  7 cups sugar, 4 cups strawberries, and 1 cup jalapeno with 1 pectin package. Process like you would jam.

Lunch was a big salad with everything we grow (minus the tomatoes, those are store bought)

Lettuce, radishes, onion, and beets I canned last year. 

We added meat from one of our homegrown chickens.


Dressing was homemade chipotle sauce. 

Mix all in a food processor or blender. I just poured everything in, so this is the recipe...more or less, sorry. 

2 chipotle peppers (I like the onions too, so I added them)

Like this...
Plus 1/2-3/4 cup oil
1/4 cup real maple syrup
5 tablespoons rice wine vinegar
salt 
pepper
oregano (dried)
and a dash of garlic powder



The dressing was so good I will use it on sandwiches later. 


The afternoon was filled with time in the greenhouse... tis the season!

Out in nature today and a fresh dinner

It was a perfect morning to get out and go for a walk with the family and dog. 

There were a lot of different families out and about.





This is an eagle's nest and if you look closely you can see some young ones in the nest and on the pole. 



We did drive through a storm on the way home with hail and tornado warning. I like that our phones alert us. There was a tornado spotted over our little town. 


After a lot of rain, things began to clear.

 I know a lot of place across the nation are picking zucchini, tomatoes and squash but we, here in Colorado, are still in lettuce and berry season.  We are just planting out squash. 

I started with a basic salad from the garden of mixed greens and our radishes, adding garbanzo beans.


Dude topped his with some of our roasted chicken. 


I topped mine with smoked herring. 


We added some of those in season berries.


I roasted some of the extra radishes with salt, pepper, a small bit of olive oil and balsamic at 400* for 20minutes.  It makes them sweeter. 


I added yogurt to my berries. 


We are tucked in for the night. The storms have calmed down and so have I.  I was stung by a bee today causing my arm to swell. I took an   antihistamine to help with the annoy itch and now I am very sleepy. If we had been close to home when it happened I would have put a baking soda paste on it and it would have healed up quickly.

Garden to Table and other stuff on the homestead.

The greenhouse is taking off. Everything has, at least, poked through the soil.



Today I picked all bunch of different greens... spinach, lettuces...


Made a wonderful salad for dinner from the garden and leftover veggie tray from the holiday. 
 

Used leftover turkey, cheese and cheeseball from Easter mixed with green chilies to make taquitos for dinner. 




Ready to pack and head to work. The little gray lids have salsa for the taquitos and dressing for the salad.


I did cut out a new purse for summer.
